Ramen & Gyoza – Home-Style Japanese Comfort Food
Ramen is now one of the most beloved Japanese foods around the world. While it’s not something most Japanese people cook at home, I grew up eating homemade ramen lovingly prepared by my father. His ramen was simple, nourishing, and made completely from scratch—no additives, just a gentle, flavorful broth slowly simmered for hours.
Inspired by those childhood memories, I created this class to share a more home-style approach to ramen. Together, we’ll make authentic shoyu (soy sauce) ramen using a traditional broth made from kombu (kelp), niboshi (dried sardines), and chicken. This lighter, comforting style of ramen is quite different from restaurant versions and reflects how ramen can be enjoyed at home.
Alongside the ramen, we’ll also prepare juicy, vegetable-packed gyoza from scratch. It’s a satisfying and well-balanced meal that brings together two classic comfort foods, made and enjoyed together.

A Signature Market Tour & Home Cooking Experience in Tokyo
From Market to Meal is Tokyo Cooking Studio’s very first tour and cooking experience—and a long-running signature class loved by guests over the years. This experience was also featured in the The New York Times Travel Tokyo Guide.
We begin the day by visiting a local supermarket in the Shibuya area, the kind Tokyo residents use for everyday shopping. Together, we’ll explore seasonal vegetables, meats, fish, and essential Japanese condiments, while talking about how Japanese food culture is experienced at home—often very differently from what is served abroad.
After shopping, we’ll take a short train ride to our home-style cooking studio. Using the ingredients we selected together, you’ll cook a seasonal menu and learn how everyday washoku is prepared in Japanese households. Along the way, you’ll use traditional kitchen tools and gain practical tips you can apply in your own city.
